Vegetarian Chili

1 tablespoon olive oil                                                  

1 medium sweet onion, diced                                       

1 red bell pepper, diced                                                  

2 jalapeno peppers, minced                                             

2 cloves garlic, minced                                                    

1 tablespoon chili powder                                              

1 tablespoon cumin                                                       

1 teaspoon cayenne pepper                                        

1 (28-ounce) can diced tomatoes

    in juice

1 (15-ounce) can black beans, rinsed

    and drained

1 (15-ounce) can pinto beans, rinsed

    and drained

2 (15-ounce) cans red kidney beans,

    rinsed and drained

1/4 cup honey

1/4-1/2 cup vegetable stock

1 drop Cinnamon essential oil

1 tablespoon cilantro, chopped

Salt, to taste

Pepper, to taste


Add olive oil, onion, pepper, garlic, and seasoning to pan.  Sauté 10 minutes.  Add tomatoes, beans, honey, and stock.  Bring to rolling boil.  Simmer over low heat 2-3 hours.  Add essential oil 10 minutes before serving.  If desired, garnish with cilantro and cheese.
