Quick and Easy Tomato Basil Soup

·       1 can diced stewed tomatoes roasted

·       3/4 cup chicken broth

·       1 can tomato soup

·       8 ounces heavy cream or half and half

·       2 ounces butter

·       1 teaspoon sugar

·       1 shake of crushed dried basil

·       2 toothpick dips of basil essential oil

·       2 toothpick dips of black pepper essential oil

·       Ground pepper to taste

·       A few shakes of granulated garlic (optional)


Mix tomatoes and broth in a saucepan and heat to a boil.  Reduce heat, cover, and simmer for about 10 minutes.  Add soup, cream, butter, sugar, dried basil and essential oils.  You can add more dried basil or ground pepper to taste, but do not add more essential oil, as it quickly becomes too powerful in flavor.  Add garlic if desired.  Cook on low heat until butter is melted and the soup is not and bubbly.
